Here in Greece, we’re still deep in the Lenten season, a 49-day period before Easter and a time of spiritual and physical cleansing. It’s a great time to reset, cleanse, and clarify intentions for the year. It also happens to be a great time to get back to the roots of the Mediterranean diet. Fall is an interesting transitional time in the Greek kitchen. Summer produce still abounds - head to your local laiki (street produce market) and you’ll find tables full of overripe tomatoes sold for sauces, as well as a literal cornucopia of peppers! But as you wander the market’s many stalls (or even peruse the shelves of your supermarket), you’ll notice the first telltale signs of a new season’s ingredients, too. And this means there are a whole crop of delicious plant-based recipes that come with the change of seasons.

Tomatoes have been a part of my Greek kitchen for as long as I can remember. In the 1960s, I can recall the pinkish orange tomatoes in white plastic tubs wrapped in clear crinkly plastic that were the standard kind in local New York supermarkets. They didn’t inspire! Jump ahead to 1972: It’s my first visit to Ikaria, and I had avoided tasting tomatoes up until this point, but while on the island, one was forced upon me by a well-meaning aunt. Truth be told, my life has never been the same!
