Vegan Oatmeal Cookies


ROLLED OATS 101 Rolled oats are lightly processed whole-grain food. Traditionally, they are made from oat groats that have been unhulled and steamed, before being rolled into flat flakes under big rollers and then preserved by being lightly toasted.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose or whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 Tbsp cornstarch
  • 1/2 tsp regular baking powder
  • 1/4 tsp cinnamon optional
  • 1 pinch of sea salt
  • 1/3 cup finely chopped fresh apple preferably Pink Lady, Gala and Granny Smith
  • 1 banana peeled and mashed
  • 2 dates mashed
  • 1/3 cup finely ground hazelnuts
  • 1/4 cup extra virgin Greek olive oil
  • 1/3 cup almond milk

Instructions

  1. Preheat oven to 350F/ 175C.
  2. In a mixing bowl, combine oats, flour, sugar, cornstarch, baking powder, cinnamon, and salt.
  3. Add the apple, the banana, the dates, and the hazelnuts to the mixing bowl.
  4. Mix olive oil and almond milk in a measuring cup, then pour into the mixing bowl with the dry ingredients. Stir until well combined.
  5. Drop 12 heaping tablespoon-sized mounds onto a parchment-lined cookie sheet. If you prefer smaller cookies, you can level off your tablespoons of dough and make about 15 cookies.
  6. Bake for 15-16 minutes or until the edges of the cookies are slightly browned. (If you're making 15 smaller cookies, bake them slightly less).
  7. Allow your cookies to cool for 5 minutes before removing them from the baking tray.
