Creamy Lemon Mocktail
HOW TO REMOVE WAX FROM LEMONS AND LIMES
Many lemons and limes are coated with wax to keep their skin shiny and bright. The wax is considered safe to eat but it’s not so tasty when you zest them! It’s easy enough to remove the wax: Place the lemons or limes in a single layer in a colander and pour over several kettles full of boiling water. Using a clean (unsoaped) scrubbing sponge, scrape the outside of the fruit then rinse the fruit and wipe it dry before zesting.
Ingredients
- 2 cups unsweetened almond milk
- 1 unwaxed lime ends trimmed, quartered
- 2 medium sized unwaxed lemons ends trimmed, quartered
- 2 Tbsp Greek honey or more, to taste
- 2 – 3 drops of almond extract
Instructions

Bring the almond milk to a simmer in a medium pot and cook until reduced to 2/3 cup. Remove and set aside to cool. You can cool it down in an ice bath as well.

Place the reduced almond milk, cut lemons and limes, and honey in a blender or food processor. Add 3 cups of cold water. Add all ingredients to a blender and cover with 5 cups cold water. Blend for about 10-15 seconds at high speed.

Strain through a fine strainer but do not press the solids. Discard what is left.

Serve the drink over ice, garnished with lemon or lime slices.
