Ingredients
- 300 g short-cut pasta ditali, rigatoni, penne
- 2 cups cherry tomatoes quartered
- 1 cucumber diced
- 1 red bell pepper chopped
- 1 small red onion chopped
- 1/2 cup Kalamata olive rings
- 1 cup cooked chickpeas
- 3/4 cup crumbled feta
- 1/4 cup chopped parsley
- 2 tbsp chopped oregano
Creamy Greek Yogurt Dressing
- 1/2 cup plain Greek yogurt
- 3 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 2 tsp dried oregano
- 1 small garlic clove
- Salt & pepper
Instructions

Cook pasta, drain, and rinse.

Combine vegetables, olives, and chickpeas.

Whisk dressing ingredients.

Add pasta to vegetables & chickpeas.

Toss with dressing.

Fold in feta and half the herbs; season.

Scatter remaining herbs, serve chilled or at room temp.
