Ingredients

  • 300 g short-cut pasta ditali, rigatoni, penne
  • 2 cups cherry tomatoes quartered
  • 1 cucumber diced
  • 1 red bell pepper chopped
  • 1 small red onion chopped
  • 1/2 cup Kalamata olive rings
  • 1 cup cooked chickpeas
  • 3/4 cup crumbled feta
  • 1/4 cup chopped parsley
  • 2 tbsp chopped oregano

Creamy Greek Yogurt Dressing

Instructions

  1. Cook pasta, drain, and rinse.
  2. Combine vegetables, olives, and chickpeas.
  3. Whisk dressing ingredients.
  4. Add pasta to vegetables & chickpeas.
  5. Toss with dressing.
  6. Fold in feta and half the herbs; season.
  7. Scatter remaining herbs, serve chilled or at room temp.
