SPICED RAW CARROT SALAD


FUN FACT: Carrots are about 10 percent carbs, consisting of starch, fiber, and simple sugars. They are extremely low in fat and protein. Also, the beta carotene in carrots is a skin-friendly nutrient that gets converted to vitamin A inside the body, and we need vitamin A to strengthen our immune systems, for eye health and for growth and development. All that in a delicious salad!

Ingredients

  • 8 large carrots pared
  • 1 small garlic clove minced
  • 4 Tbsp ground walnuts
  • ½ tsp cinnamon powder
  • ½ tsp cumin powder
  • ¼ tsp cayenne or more to taste
  • cup extra virgin Greek olive oil
  • Strained fresh juice of 1 lemon
  • Greek sea salt to taste
  • ¼ cup shredded fresh mint leaves

Instructions

  1. Using a mandolin or spiralizer, cut the carrots into thin strands.
  2. Combine the carrots, garlic, walnuts, spices, olive oil, lemon juice and salt in a serving bowl. Cover and let stand for one hour at room temperature or in the refrigerator for up to eight hours. Mix in the mint and serve.
