Ingredients

  • Vegetable stock
  • 1 tablespoon unsalted butter
  • 6 tablespoons extra-virgin Greek olive oil divided
  • ½ pound medium orzo
  • 1 large red onion chopped
  • 1 large green bell pepper seeded and coarsely chopped
  • Sea salt to taste
  • 2 garlic cloves finely chopped
  • 6 cups chopped fresh ripe tomatoes with juices
  • cups crumbled Greek feta or Cretan xynomyzithra
  • ½ cup sliced Kalamata olives
  • 2 tablespoons capers rinsed and drained
  • 3 tablespoons chopped fresh oregano

Instructions

  1. Bring the vegetable stock to a simmer.
  2. Heat butter with 1 tablespoon olive oil in a wide skillet. Add orzo and toast lightly.
  3. Add hot stock gradually, stirring until absorbed, repeating until orzo is tender but al dente.
  4. In another pan, sauté onion and bell pepper in olive oil until soft. Add garlic.
  5. Stir in tomatoes and cook until slightly thickened.
  6. Combine tomato mixture with orzo.
  7. Stir in feta, olives, capers, and oregano until creamy.
  8. Drizzle remaining olive oil, remove from heat, and serve.
