
Greek Pressed Oyster Mushrooms with Ladolemono & Greek Yogu
Ingredients
- 300 g oyster mushrooms pleurotus mushrooms
- 2½ tablespoons extra virgin olive oil
- Juice of ½ lemon
- 2 garlic cloves minced
- 1 teaspoon dried Greek oregano
- 125 g Greek yogurt
- Fresh mint or parsley leaves for garnish
- Aleppo pepper to taste
- Flaky sea salt to taste
Instructions

In a large bowl, whisk together the olive oil, lemon juice, garlic, and oregano.

Add the oyster mushrooms and toss gently to coat evenly. Let marinate for 10 to 15 minutes.

Heat a grill pan or cast-iron skillet over high heat until smoking hot.

Arrange the mushrooms in a single layer and place a heavy skillet, grill press, or weighted pan on top. Cook until deeply charred and crisp around the edges, about 4 to 5 minutes.

Turn the mushrooms over, press again, and cook until browned and caramelized on the second side, another 3 to 5 minutes.

Spread the Greek yogurt onto a serving platter.

Arrange the hot mushrooms over the yogurt. Garnish with fresh mint or parsley, a pinch of Aleppo pepper, flaky sea salt, and a final drizzle of extra virgin olive oil.

Serve immediately.
