Instructions

  1. Prep the Oven & Feta: Preheat oven to 400°F (200°C). Pat feta dry with a paper towel. Lightly oil the bottom of a small baking dish or oven-safe pan and place the feta in the center.
  2. Add Olive Oil: Drizzle 1–2 teaspoons of olive oil over the top and sides of the feta, ensuring it’s lightly coated.
  3. Bake: Bake on the center rack for about 10 minutes, until warm and slightly softened but not melted.
  4. Add Honey & Broil: Remove from oven. Set oven to broil. Drizzle honey and a little more olive oil over the top of the feta, covering the surface. Return to oven and broil for 2–5 minutes, watching closely, until the top is golden and caramelized.
  5. Finish & Serve: Remove from oven. Drizzle with a bit more honey if desired. Sprinkle with fresh thyme or mint and a pinch of black pepper or chili flakes for a kick. Swish the cheese around so that it’s all melty. Serve immediately with crusty bread or pita.
