Combined with Greece's quintessential olive oil and lemon dressing—ladolemono—these mushrooms become a simple but remarkably flavorful dish. Ingredients

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, and oregano.
  2. Add the oyster mushrooms and toss gently to coat evenly. Let marinate for 10 to 15 minutes.
  3. Heat a grill pan or cast-iron skillet over high heat until smoking hot.
  4. Arrange the mushrooms in a single layer and place a heavy skillet, grill press, or weighted pan on top. Cook until deeply charred and crisp around the edges, about 4 to 5 minutes.
  5. Turn the mushrooms over, press again, and cook until browned and caramelized on the second side, another 3 to 5 minutes.
  6. Spread the Greek yogurt onto a serving platter.
  7. Arrange the hot mushrooms over the yogurt. Garnish with fresh mint or parsley, a pinch of Aleppo pepper, flaky sea salt, and a final drizzle of extra virgin olive oil.
  8. Serve immediately.
