Strawberry Tomato Greek Salad


This Strawberry Tomato Greek Salad is a fresh, vibrant twist on the classic Greek salad, perfect for summer. Juicy strawberries and ripe tomatoes mingle with creamy feta, crisp cucumber, and aromatic herbs like basil and mint, all brought together with a drizzle of extra virgin olive oil and a splash of balsamic vinegar. This Mediterranean-inspired salad is as beautiful as it is delicious, making it ideal for picnics, summer barbecues, or healthy weeknight dinners. Ingredients

  • 8 - 10 Fresh strawberries hulled and sliced or quartered
  • 20 teardrop cherry or heirloom tomatoes
  • ½ to 2/3 cup crumbled Greek Feta cheese
  • 1 medium cucumber quartered lengthwise and sliced (optional)
  • 2 scallions trimmed and sliced or chopped or 1 small red onion, thinly sliced or chopped (optional)
  • ½ cup fresh herbs or choice julienned or chopped: basil, mint, or parsley
  • 3 tablespoons Greek extra virgin olive oil
  • 2 teaspoons Balsamic vinegar or lemon juice
  • Sea Salt and black pepper to taste
  • Optional: Salad greens arugula, spinach, or mixed greens, pistachios or walnuts, spring onions, cress or microgreens

Instructions

  1. Wash and hull the strawberries, then slice or quarter them.
  2. Halve the tomatoes. Slice the cucumbers and scallions or onions if using.
  3. Chop the herbs.
  4. In a large bowl or on a serving platter, combine the strawberries, tomatoes, cucumber, onion, and herbs. Add greens, if desired.
  5. Crumble feta cheese over the top and sprinkle with nuts if using.
  6. Whisk together olive oil and balsamic vinegar (or lemon juice). Season with salt and pepper.
  7. Drizzle the dressing over the salad and toss gently. Garnish with extra herbs and serve immediately.
