
Greek Salad Wrap with Mashed Feta Spread

Ingredients
Wraps:
- 2 large whole wheat or spinach wraps
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 1/2 cup red bell pepper diced
- 1/4 cup red onion thinly sliced
- 1/4 cup kalamata olives sliced
- 1/2 cup baby spinach or romaine
Mashed Feta Spread:
- 3/4 cup feta crumbled
- 2 tbsp plain Greek yogurt
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp dried oregano
- Black pepper
Optional:
- 1/2 cup chickpeas or lentils
- 1/4 tsp ground cumin
Instructions

Mash feta, yogurt, olive oil, lemon, oregano & pepper with fork.

Toss chickpeas/lentils with cumin if desired.

Spread feta mix on wrap, layer in veggies & beans.

Roll, slice on diagonal, serve or pack.

Tips: Add sunflower/pumpkin seeds, or a little extra olive oil or vinegar to taste.
