Greek Salad Wrap with Mashed Feta Spread

Ingredients

Wraps:

  • 2 large whole wheat or spinach wraps
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup kalamata olives sliced
  • 1/2 cup baby spinach or romaine

Mashed Feta Spread:

  • 3/4 cup feta crumbled
  • 2 tbsp plain Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp dried oregano
  • Black pepper

Optional:

  • 1/2 cup chickpeas or lentils
  • 1/4 tsp ground cumin

Instructions

  1. Mash feta, yogurt, olive oil, lemon, oregano & pepper with fork.
  2. Toss chickpeas/lentils with cumin if desired.
  3. Spread feta mix on wrap, layer in veggies & beans.
  4. Roll, slice on diagonal, serve or pack.
  5. Tips: Add sunflower/pumpkin seeds, or a little extra olive oil or vinegar to taste.
