Ingredients

  • 1 medium cucumber sliced into 1/8-inch half-moons
  • 1 bunch arugula trimmed
  • 2 cups chilled watermelon cut into 1-inch cubes
  • Finely grated zest of 1 lemon
  • 2/3 cup crumbled Greek feta cheese
  • 4 tablespoons extra virgin Greek olive oil
  • Sea salt to taste

Instructions

  1. Prep the Veggies: Trim ends off cucumber, scoop out seeds if large, and slice.
