
Marinated Greek Feta & Herbs in Extra Virgin Olive Oil

Ingredients
- 1 block 8 oz / 200 g Greek feta cheese, cut into 1-inch cubes
- Extra virgin olive oil enough to fully cover feta
- 2 –3 garlic cloves sliced
- 1 –2 sprigs fresh rosemary
- 1 –2 sprigs fresh oregano
- 1 tsp black peppercorns
- ½ –1 dried chili or red pepper flakes optional
- Zest of ½ lemon
- Optional herbs/spices: fresh dill thyme, za’atar, basil, parsley
- Optional: roasted vegetables
Instructions

Prepare the feta: Cut feta into 1-inch cubes.

Layer in jar: Place garlic, rosemary, oregano, peppercorns, chili (if using), and lemon zest into jar.

Add feta: Nestle feta cubes among herbs and spices.

Cover with oil: Pour extra virgin olive oil until feta is completely submerged. Tap gently to remove air bubbles.

Marinate: Seal jar. Let sit at room temp 1–2 hrs, then refrigerate at least 2 days to allow flavors to meld.

Serve: Bring to room temperature before serving so the olive oil liquifies and intensifies flavor.
