Greek Lemon Chicken Skewers

Ingredients

  • 1.5 lbs 700g boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
  • 1/4 cup extra virgin olive oil
  • Juice and zest of 1 large lemon
  • 2 tablespoons minced garlic
  • 1 ½ tablespoons dried Greek oregano
  • 1 teaspoon sea salt
Freshly ground black pepper to taste
  • 1/2 teaspoon paprika smoked paparika or cayenne (optional)
  • 8 wooden or metal skewers 6 to 8 inches long

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, salt, pepper, and paprika or cayenne (if using).
  2. Add the chicken pieces and toss well to coat. Cover and refrigerate for at least 30 minutes, up to 4 hours. Soak wooden skewers if using.
  3. Thread the marinated chicken onto skewers snugly.
  4. Heat the grill pan over medium heat and brush it lightly with olive oil. Grill the chicken skewers for 10–12 minutes, turning every few minutes, until chicken is cooked through and lightly charred.
  5. If grilling outdoors, heat the grill to medium and grill the skewers, turning, for about 10 – 12 minutes, until the chicken is thoroughly cooked through.
  6. You can also broil the skewers: Preheat broiler to high. Place skewers on a foil-lined baking sheet and broil for 10–12 minutes, turning once, until golden and cooked through.
  7. Transfer to a platter. Squeeze extra lemon juice over the top and sprinkle with fresh oregano if desired. Serve with tzatziki, lemon wedges, Greek salad, or warm pita bread.
