SPICED RAW CARROT SALAD
FUN FACT:
Carrots are about 10 percent carbs, consisting of starch, fiber, and simple sugars. They are extremely low in fat and protein. Also, the beta carotene in carrots is a skin-friendly nutrient that gets converted to vitamin A inside the body, and we need vitamin A to strengthen our immune systems, for eye health and for growth and development. All that in a delicious salad!

extra virgin Greek olive oil

Strained fresh juice of 1 lemon

Greek sea salt to taste

shredded fresh mint leaves

Using a mandolin or spiralizer, cut the carrots into thin strands.

Combine the carrots, garlic, walnuts, spices, olive oil, lemon juice and salt in a serving bowl. Cover and let stand for one hour at room temperature or in the refrigerator for up to eight hours. Mix in the mint and serve.
