Smashed Chickpeas on Toast

15-ounce can chickpeas, drained and rinsed, or 1 2 cups pre-cooked chickpeas

–2 garlic cloves
minced

–2 spring onions
chopped

firm tomato, chopped

ground cumin

teaspoon
sweet paprika or red pepper flakes

Sea salt
to taste

– 2 tablespoons crumbled Greek feta
for garnish, optional

Toast the Bread: Drizzle olive oil on both sides of bread. Toast in a hot skillet until golden. Remove and set aside.

Prepare the Chickpeas: In the same skillet, add olive oil, chickpeas, garlic, onions, and tomato. Season with cumin, paprika or pepper flakes, and sea salt. Cook for 3–5 minutes.

Smash the Chickpeas: Turn off heat and gently mash chickpea mixture, leaving some texture.

Assemble: Spoon mixture onto toast. Garnish with parsley and feta, if desired, and drizzle generously with olive oil.
