Simmer Trahana: In a medium saucepan, combine trahana, milk, and water. Simmer over medium heat for about 12 minutes, adding more liquid if needed to reach a thick, porridge-like consistency.
Garnish and Serve: Remove from the heat and divide the trahana porridge into serving bowls. Garnish with chopped dried apricots, figs, and almonds. Drizzle with Greek pine honey to taste, and season with a pinch of dried mint, if using. Serve warm.

Why Trahana Belongs on Your Breakfast Table
Unlike typical processed cereals or instant oats, trahana brings with it an unmistakably Greek character rooted in longevity nutrition. Because it’s fermented, it’s easier to digest, packed with probiotics, and a wonderful slow-releasing carbohydrate that keeps you satisfied all morning long.
In Greece, trahana is often enjoyed as trahanosoupa (trahana soup), particularly in winter, but this sweet breakfast version is a lighter, adaptable way to bring Greek tradition into your everyday meals.
