CHIA SEED PUDDING WITH FRESH BERRIES AND DARK CHOCOLATE NIBS
	
		AMAZING CHIA SEEDS
A power-packed superfood whose name means strength in the Mayan language, Chia is native to Mexico and Guatemala. Besides being packed with nutrients such as thiamine, niacin, and various dietary minerals including manganese, selenium, phosphorous, and copper, chia has the ability to absorb up to ten times its volume of liquid, so it is used frequently as an egg substitute in vegan baking, or, as above, in puddings.

										raw Greek honey or maple syrup

In a bowl or mason jar, stir together chia seeds, milk, and petimezi. Combine well.

Once the mixture is well combined, let it sit for 5 minutes, stir it once more in case there are chia seeds clumps, cover and put the mixture in the fridge for a couple of hours or overnight. If the pudding isn’t firm enough, just add more chia seeds (about 1/2 Tablespoon), stir, and refrigerate for another 30 minutes or so.

Add the fruits, almond butter, chocolate nibs, top with mint and sesame seeds and serve.
