Mache Salad With Salmon And Oranges
What is Mache
Mache, or Varelianella locusta, is a tender salad green with soft, velverty rounded leaves. It’s got a mild flavor and pairs well with a whole variety of other ingredients. It’s also a good source of Vitamins A, C and B6 as well as Manganese. Any tender green or Bibb lettuce may be used in this salad as well.

of mache or other tender salad green or mixed greens

pine nuts
lightly toasted

red onion cut in 1/4 inch dice

of balsamic vinegar

extra virgin Greek olive oil

Sea salt and pepper

salmon fillets or steaks

Peel one of the oranges, removing the pith and seeds if there are any. Cut that into segments about an inch or so. Zest and juice the second orange and set aside.

In a mixing bowl combine the mache, pine nuts, onion, and orange segments.

in a smaller, separate bowl prepare the dressing: whisk together the zest, juice, balsamic vinegar, salt, pepper, and 3 tablespoons of olive oil.

Pat the salmon dry with paper towels and rub with the remaining olive oil. Season with salt and pepper. Sear, broil, or grill the salmon until done. Remove, cool, and break apart into boneless chunks.

Add the salmon to the salad. Pour the dressing over the mixture, toss gently and transfer to serving bowls.
