Ginger Wine Spritzer

RELAX WITH WINE:

Wine is the de facto way people on Ikaria relax, always drinking in moderation and in the company of friends, but also, often, watering down their wine lest it adversely goes to their heads! Taking a cue from this ancient habit, this wine cocktail is also a mixture of, well, wine and water. The lemony ginger infusion is a beautiful foil to the sweet dessert wine of Samos, an island close to Ikaria renowned for its muscats.

SERVES 4

Ingredients

  • 1 1- in. knob of ginger peeled and grated
  • Fresh strained juice of ½ lemon
  • 1 ½ cups water
  • 1 tsp Greek honey
  • 150 ml sweet wine from Samos Samos Vin Doux
  • 100 ml seltzer
  • 1 cup ice cubes or more as desired
  • 1 thin slice of lime

Instructions

  1. Make the ginger water: Combine the grated ginger, 1 ½ cups of water, lemon juice and honey in a jar. Shake and stir all together very well and store, covered, in the fridge for 2 to 24 hours.
  2. Strain the ginger water. Mix the ginger water with the wine in a small pitcher. Fill 4 wine glasses with ice and pour over the wine-ginger water mixture. Top off with the seltzer and garnish with lime or lemon slices.
