Mountain and Sage Iced Tea

Here’s a Greek recipe for iced tea made with ancient herbal classics like sage and mountain tea. It’s the perfect quaff for a Mediterranean diet frame of mind! Herbal tea is one of the secrets to longevity on Blue Zone islands like Ikaria, but truth be told, people all over Greece drink herbal teas, usually made with herbs they pick themselves and dry. You can find both sage and Greek mountain tea, which is particularly therapeutic, on my site.

Ingredients

  • 3 ½ cups boiling water
  • ¼ cup mix of loose mountain tea and loose sage tea
  • 1-2 Tbsp raw Greek honey
  • Ice to serve
  • Fresh mint leaves to garnish
  • Slices of lemon (optional)

Instructions

  1. Place the teas in a French press or other heat resistant container or flask.
  2. Pour the boiling water over the teas and stir gently.
  3. Allow the tea to steep until the water has cooled down. If using a French press, press down for the tea to remain at the bottom of the container and transfer your tea to another container. If you are using a different type of a container, pour the tea through a sieve or a paper filter to remove the wilted loose leaves.
  4. Add the honey and stir until it dissolves.
  5. Refrigerate your tea for 3-4 hours, until cold.
  6. To serve, pour over ice and garnish with fresh mint leaves and lemon slices, if desired.
