Keto-friendly Cauliflower “Mashed Potatoes” with Greek Yogurt

A lot of Greek food is keto friendly, even if we don’t stick a label on particular recipes! But this Greek recipe for cauliflower mashed potatoes – without potatoes! – can cover all bases: it’s vegetarian, it’s Mediterranean diet friendly, it contains healthy fats in the extra virgin Greek olive oil, it’s got a sprinkling of tradition in the Greek feta and Greek yogurt, it’s low-carb and keto, too! All good things! It’s also very easy and inexpensive to make and it’s absolute Mediterranean diet comfort food, too!

Ingredients

  • 2 medium heads of cauliflower trimmed and cut into florets
  • 2/3 cup crumbled Greek feta ounces by weight)
  • 2/3 cup plain full-fat Greek yogurt
  • 3 – 4 tablespoons extra virgin Greek olive oil or more, as needed
  • Sea salt or to taste
  • Black pepper or to taste
  • 2 tablespoons chopped chives optional

Instructions

  1. Cut the cauliflower heads down into florets. Place ina steamer basket inside a large, wide pot with about 2 inches of water. Cover and bring the water to a boil. Steam the cauliflower until fork tender, about 10 minutes. Remove and drain very well in a colander.
  2. Let the cauliflower cool until you can handle it – note, though, it needs to be relatively hot when pureeing to absorb the yogurt, olive oil and feta more easily. Place the steamed florets inside a lint-free kitchen towel and wring to get out as much water as possible.
  3. Place half the florets in the bowl of a food processor together with half the Greek yogurt, feta and olive oil. Season to taste with salt and pepper and process until smooth. Repeat with remaining ingredients. Serve, garnished with chopped chives.
