Wheatberry Salad With Pomegranate And Apple

  1. In a large pot, bring the three cups of water to a boil and add the wheat. Cook uncovered for 1 hour or until tender. Drain and let cool.
  2. In a large bowl, combine the drained, cooked wheatberries, celery, pomegranate, pineapple, spring onions, parsley, olive oil, and lemon juice. Season to taste with salt and pepper and serve.
