Mediterranean Diet Lettuce Wrap

ABOUT LETTUCE WRAPS: Lettuce wraps are a great alternative to sandwiches between the bread, so to speak. While they’re traditional throughout Southeast Asian cuisine, they’ve actually been around a while in the West, too, as early as the late 19th century in the U.S. and UK.

Ingredients

  • 4 large tender Romaine lettuce leaves
  • 1 cup shredded cabbage
  • ½ cup shredded purple cabbage
  • 1 large carrot shredded
  • 1 cup chopped arugula optional
  • 2 pickled pepperoncini peppers or more, to taste. Seeded and julienned
  • 8 cherry or teardrop tomatoes halved or quartered lengthwise
  • 2 Tbsp chopped fresh oregano
  • 2 Tbsp chopped fresh mint
  • For the Dressing
  • 2 tsp hot mustard powder
  • 2 Tbsp Greek yogurt
  • Grated zest of 1 lemon
  • 1 - 2 Tbsp lemon juice to taste
  • 2 Tbsp extra virgin Greek olive oil
  • Sea salt to taste
  • Greek Yogurt optional, to serve

Instructions

  1. Combine the shredded cabbages, arugula,if using, grated carrot, pepperoncini, tomatoes, and herbs in a mixing bowl. Season with a little salt.
  2. Whisk together all the dressing ingredients and stir it into the salad filling.
  3. Place the Romaine lettuce leaves in front of you and place a quarter of the salad on each of the leaves. Roll it up like a wrap, tucking in the ends so that the filling doesn’t fall out. Serve, with a small bowl of Greek yogurt on the side if you like.
