Sweet Feta Truffles with Dark Chocolate & Spices
Here is a Mediterranean diet dessert recipe made for Love and Valentine’s Day! I know, I know, Greek feta is not something one usually thinks of in combination with chocolate, but the match is a beguiling one, especially as the tang of the cheese is mellowed with the addition of extra virgin Greek olive oil and brown sugar. I like to think of these unusual truffles as an ode to love itself, a composition of sometimes opposing elements to create a harmonious whole!
-
2
cups
Greek feta
-
1/3
cup
extra virgin Greek olive oil
-
¼
cup
brown sugar
-
Grated zest of 1 orange
-
12
ounces
dark chocolate
or more as needed
-
2
teaspoons
crushed pink peppercorns
-
Optional: cinnamon powder
-
Using a fork, mash the feta and olive together in a medium bowl. Mix in half the grated orange zest and sugar and combine well. Put the feta mixture in the fridge until ready to use.
-
Shave the chocolate using a fine-toothed micro plane or other grater and spread the grated chocolate onto a flat plate. Add the remaining orange zest and crushed pink peppercorns and mix well. If you want, you can also add a little cinnamon powder to the chocolate.
-
Using a teaspoon or melon baller, take equal portions of the feta mixture each time and shape into small balls, a little less than an inch in diameter. Roll the balls in the grated chocolate mixture and set aside on a plate lined with wax paper. Continue until the feta and chocolate are all used up. Store in the fridge!
