Olive Oil Oatmeal Cookies with Greek Honey

There are many great Greek recipes for cookies, both traditional and contemporary. This one, for olive oil-honey oatmeal cookies is definitely of the newer variety. They make for an easy on-the-go Greek breakfast!

Ingredients

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons hot water
  • 3 tablespoons Greek honey
  • 6 tablespoons sugar
  • ½ cup extra virgin Greek olive oil
  • 1 cup all-purpose flour
  • ½ cup almond flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Pinch of ground cloves
  • ¼ teaspoon salt
  • 1 cup rolled oats
  • ½ teaspoon baking soda
  • 2/3 cup Greek currants raisins or chocolate chips
  • 1 – 2 teaspoons coarse salt for sprinkling

Instructions

  1. Preheat the oven to 325F.
  2. In the bowl of a stand mixer, at mediums speed, whisk together the egg, vanilla, water, honey, and sugar until well blended. Add the olive oil next and whisk to combine well.
  3. Combine all the dry ingredients separately in a bowl: the flour and almond flour, spices, salt, oats and baking soda.
  4. Add the dry ingredients to the liquid in increments and mix gently to combine. Lightly mix in the raisins or chocolate chips.
  5. Line a cookie sheet with parchment or lightly brush with olive oil. Drop two tablespoons per cookie onto the cookie sheet, leaving at least an inch between each dollop. Sprinkle the cookies with sea salt and bake for 12 – 15 minutes, or until the edges start to brown lightly. Remove and cool on racks.
